"Protein structure and biological function are determined by their sequence,"
There is an easy way to verify this statement: If protein have their structure and function determined by their sequence alone an iv injection of 15 meq/l KCl in the aortic root will do no harm. This concentration (aprox 10% of intracellular levels of K) in extracellular space does not have any effect upon the sequence of proteins inside membranes and /or in the intracelluar space.
